Enchilada Casserole
This enchilada casserole is a delicious and easy-to-make dish that combines layers of tortillas, seasoned meat, cheese, and enchilada sauce. Perfect for a family dinner or a potluck, this casserole is sure to be a hit!
Ingredients
- 9 corn tortillas
- 1.5 pounds ground beef
- 3 cloves of minced garlic
- ground cumin
- salt
- pepper
- chopped onion
- 1 can of enchilada sauce
- shredded cheese
- Pam cooking spray
- foil
Let's start cooking!
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Add the minced garlic, chopped onion, ground cumin, salt, and pepper.
- After the ground beef is browned, add can of enchilada sauce and let it warm for about 5 minutes.
- Spray the bottom of the cooking pan with Pam cooking spray. Don't spray too much but be sure that the pan has a light coating throughout.
- Add a layer of the enchilada sauce to the bottom of the pan and cover with cheese.
- Spread one-third of the cooked ground beef mixture over the tortillas.
- Sprinkle one-third of the shredded cheese over the beef layer.
- Place three tortillas over the cheese layer.
- Repeat the layering process two more times: beef sauce, cheese, tortillas.
- Pour any remaining enchilada sauce over the top layer of tortillas.
- Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
- Let the casserole sit for 15 minutes before serving. Enjoy!
