Let's start cooking!

  2. In a large skillet, cook the ground beef over medium heat until browned. Add the minced garlic, chopped onion, ground cumin, salt, and pepper.
  3. After the ground beef is browned, add can of enchilada sauce and let it warm for about 5 minutes.
  4. Spray the bottom of the cooking pan with Pam cooking spray. Don't spray too much but be sure that the pan has a light coating throughout.
  5. Add a layer of the enchilada sauce to the bottom of the pan and cover with cheese.
  6. Spread one-third of the cooked ground beef mixture over the tortillas.
  7. Sprinkle one-third of the shredded cheese over the beef layer.

  9. Repeat the layering process two more times: beef sauce, cheese, tortillas.
  10. Pour any remaining enchilada sauce over the top layer of tortillas.
  11. Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
  12. Let the casserole sit for 15 minutes before serving. Enjoy!
